Wild Rice & Perch

Deep Fried Perch/Pike

Wild Rice & Perch

Ingredients


  • 1 Box Ben's Original Long Grain & Wild Rice
  • One White Onion Sliced
  • 8oz Sliced Mushrooms
  • 1 cup fresh or frozen broccoli
  • Garlic Salt (to taste)
  • 4 Tablespoon Butter
  • 1lb Perch


Directions


  1. Cook rice according to box directions.
  2. In a frying pan melt 2 tablespoons butter. Add mushrooms, broccoli and onions, saute until tender.
  3. Add Perch, garlic salt and 2 tablespoons butter, cook until the Perch is white and flaky.
  4. Add cooked rice and stir together.
  5. Serve!



Tips


Soaking filets in water with about a tablespoon of salt will lighten and firm your fish. You can soak the filets from 1 hour or overnight. If using frozen filets soak again in saltwater for about 30 mins before cooking. 




Fish Tacos

Deep Fried Perch/Pike

Wild Rice & Perch

Ingredients


  • 1 Package Taco Seasoning (your preference)
  • 1/4 cup water
  • 1lb Perch
  • Your Favorite Taco Toppings (lettuce, black olives, cheese, tomatoes, sour cream, hot sauce,  pico de gallo, the options are endless!)
  • Soft Flour Taco Tortillas


Directions


  1. In a frying pan add taco seasoning and water, bring to a boil. The filets will produce enough water to to make up the difference needed for the taco seasoning. 
  2. Add perch and heat until filets flake apart and sauce thickens. 
  3. Serve in soft flour taco tortillas with your favorite taco toppings and sauces!

Ingredients


  • 1 cup McCormick Cajun Seafood Fry Mix
  • 1lb Perch or Pike
  • Vegetable Oil for Frying
  • Fresh Lemon Juice or Tarter Sauce


Directions


  1. Rinse filets in cold water. I leave a little bit of water in the bowl so the filets are wet to dredge in Cajun Mix.
  2. In a shallow bowl (I use a pie plate) put 1 Cup Cajun Mix.
  3. Coat each filet in Cajun mix and set aside.
  4. Heat vegetable oil to 350F.
  5. Add fish to hot oil and cook for 45 seconds to 1 minute depending on filet size. Don't overcrowd fish. 
  6. Serve with fresh lemon juice or tarter sauce!
